Oily FishDid you know that.....
 
There are 4 basic cuts of fish - the round fish fillet, the flat fish fillet, the steak and the cutlet!
Oily fish are so called because their oil content is found throughout the flesh,  whereas white fish have their oil content present only in the liver.
Oily fish should have firm, even textured flesh with clear, full and shiny eyes, bright red gills and a clean smell.
