What is Quinoa?
One of man’s oldest cultivated grains used by the Incas and many civilisations who proceeded them. Quinoa has a protein balance similar to meat and Soya beans and is therefore important nutritionally, it is not a cereal grain but a herb seed related to spinach. The small seeds need rinsing before cooking or the water goes very cloudy. Quinoa looks and tastes rather like millet with a hint of sesame and cooks in about 10 minutes.
