Grilled Tropical FruitThe fruit is this recipe is enhanced with a sweet and spicy butter coating added before grilling which keeps it moist and gives a delicious finish to the dessert. Grilled Tropical Fruit can be served on its own or is especially good served with ice-cream and brandy snap basket.

4 portions Fruit selection (pineapple, mango, papaya, banana and peach) 
50 g Butter 
1/2 tsp Mixed Spice 
1/2 tsp Ginger (ground) 
1 1/2 tsp Sugar (muscovado) 
1 1/2 tsp Rum 
1 Lime(s) 
4 scoops Ice cream (vanilla) 
4 Brandy snap baskets
