Coq Au Vin (Chicken in Red Wine)A classic French dish which allows wonderful flavours to fuse together on the stove top. A very easy recipe to produce. It can be prepared the day before to allow the flavours to mature even more.

12 Shallots 
115 ml Chicken stock  
1 tbsp Olive oil 
40 g Mushrooms (dried chanterelle) 
500 ml Red wine 
25 g Butter 
3 Bay leaves (whole) 
1 tsp Oregano 
1 Bouquet Garni 
2 Garlic clove(s) 
Salt to season
Pepper to season
