Lamb Biryani

This is rather an elaborate dish to prepare but well worth the effort! It is not only beautifully coloured but tastes fantastic and in India is usually served at parties and/or festive occasions.A delicious and very spicy rice which will accompany any Indian meal.
Ingredients for

550 g Lamb (lean leg)
275 g Basmati rice
4 Garlic clove(s)
30 ml Ghee butter
1 Onion(s)
3 ml Nutmeg
3 ml Chillies (red, crushed)
200 ml Yoghurt (natural)
50 g Sultanas
Almonds (flaked) to garnish
5 ml Ginger (ground)
4 Cloves
5 ml Peppercorns (black)
4 pods Cardamom pods (green)
10 ml Cumin seeds (black)
10 ml Coriander seeds
1 stick(s) Cinnamon stick(s)
5 ml Saffron
85 ml Tepid water
1 tsp Salt
