Fruity Lamb CurryThe papaya is used to tenderise the lamb but it also gives it a lovely fruity taste. This is a dry dish with no sauce so is lovely served with a selection of raitas.

675 g Lamb (lean leg) 
115 ml Vegetable oil 
1 Papaya 
45 ml Yoghurt (natural) 
5 ml Chillies (red, crushed) 
30 ml Red chilli oil 
10 ml Lime and mango chutney 
5 ml Galangal root 
2 Garlic clove(s) 
3 ml Turmeric root (ground) 
10 ml Coriander seeds 
5 ml Cumin seeds (white) 
15 ml Lemon juice 
15 ml Coriander plus a little to garnish
Salt to season
Tomatoes to garnish
Lemon slices to garnish
