Lamb Casserole with Potatoes and Chilli Sauce

A wonderful Mexican play on Lancashire Hot Pot! Spicy, slightly fiery, but succulent and warming. Once all the preparation has been done, this recipe is just left to simmer on a low light. It's well worth it!
Ingredients for

675 g Lamb (shoulder or leg)
450 g Potatoes
1 Onion(s)
360 ml Vegetable stock
6 Peppercorns (black)
6 buds Cloves
6 Peppercorns (green)
1 tsp Pasilla chillies
2 tsp Guajilo chillies (crushed)
6 Peppercorns (pink)
1/2 tsp Cinnamon (ground)
2 tbsp Vegetable oil
2 tsp Garlic puree
