Lamb Casserole with Potatoes and Chilli SauceA wonderful Mexican play on Lancashire Hot Pot!  Spicy, slightly fiery, but succulent and warming.  Once all the preparation has been done, this recipe is just left to simmer on a low light.  It's well worth it!

675 g Lamb (shoulder or leg) 
450 g Potatoes 
1 Onion(s) 
360 ml Vegetable stock 
6 Peppercorns (black) 
6 buds Cloves 
6 Peppercorns (green) 
1 tsp Pasilla chillies  
2 tsp Guajilo chillies (crushed) 
6 Peppercorns (pink) 
1/2 tsp Cinnamon (ground) 
2 tbsp Vegetable oil 
2 tsp Garlic puree
