Lamb Shanks with Paprika and OlivesA very easy one pot casserole bursting with the authentic flavours of Spain.  Lamb shanks lend themselves perfectly to slow cooking - the meat will just fall off the bone.  Allow 2 shanks per person.

8 Lamb Shanks 
350 ml Wine (red, full bodied) 
85 ml Beef stock 
2 tbsp Olive oil 
2 tbsp Flour (plain) 
1 Onion (red) 
16 Olives (black) 
6 Tomatoes 
2 tsp Sugar 
2 Carrots 
1 tbsp Paprika 
4 Garlic clove(s) 
2 tsp Lemon juice 
1/2 tsp Cinnamon (ground) 
Salt to season
Peppercorns (black) to season
