Marinade for Duck

The ingredient that flavours gin, juniper berries, also go very well with game.  This marinade is suitable for most game - from venison to duck.

250 ml Red wine 
3 tbsp Cognac 
5 tsp Sugar 
12 Juniper berries (whole) 
1/2 tsp Peppercorns (black) 
1 tbsp Olive oil 
Salt to season
